I cook frequently and am always on the look out for new easy recipes. While the Lentil stew is not new to me this time I made it with smoked Baby Back Ribs. Lentil is a wonderful legume with lots of health benefits. They are a great economical source of protein and they can be highly beneficial for your health. Evidence suggest that Lentils protect heart health. Lentils are low in calories yet very filling and nutritional. They are considered a top “functional food” due to their high nutritive value, polyphenols, minerals, iron, fiber and other bio-active compounds. One cup (app. 200 grams) of cooked lentils has about: 230 calories. According to Discovery Health, lentils are a good diet choice for those suffering from rheumatoid arthritis because they help reduce inflammation in the body. Green lentils are high in soluble fiber, which makes them a good choice for anyone who suffers from diabetes, insulin resistance, or hypoglycemia. All Lentils are considered to be low glycemic food. They provide protein and sustenance that can replace meat in meals if desired.



  • 1 whole rack of smoked pork ribs separated
  • 6 fresh large tomatoes
  • 2 cups of rinsed lentils
  • 4 small potatoes
  • 1 white onion
  • 2 carrot’s
  • 2 cups celery
  • 4 cloves of garlic
  • 2 tsp smoked paprika
  • 2 tbsp of  parsley
  • 1 tsp oregano
  • 1 tsp harissa powder
  • salt, black pepper
  • 2 Liters of water and broth mixed
  • Light Olive Oil for cooking

How to Make It

  1. Chop up the Onion, crush the garlic and fry for a few minutes.
  2. Add, Carrots, celery and peeled tomatoes.
  3. Add all the seasonings.
  4. Add cubed potatoes and ribs. Cover with 2 liters (64 oz) water and broth.
  5. Put the lentils in the broth, bring to a boil.
  6. Reduce to simmer for about 2.5 hours, stirring occasionally.
